Lower grades of the metal, which are more porous, may expand when heated therefore allowing food to stick to the pan. The only downside of this is that it can make your cookware harder to clean. However, when your stainless steel is high quality, keeping it clean will be a breeze.

Even when lower grade, stainless steel is far less porous than other materials like cast iron. The pores in cast iron are so large that grease can become trapped in them and turn rancid! With stainless steel, however, you won’t run into such issues.

2. No Risky Coatings

Cookware made from aluminum, copper, and Teflon is coated with elements that can leach from pots and pans onto your food. Additionally, some materials actually undergo chemical reactions when heated to certain degrees that can end up making you sick. Typically the only thing you’ll find coated on stainless is chromium – the element that makes it so resistant to corrosion – which does not pose a significant threat to human health. Some people have raised concern about the leaching of nickel as well, but stainless steel is far less prone to leaching than many other cookware materials so the risk is low.

3. Even Heat Distribution

Some cooking materials, like glassware or anything enamel coated, have poor heat distribution. This can cause food to undercook or overcook and stick to the pan. With stainless steel, you won’t run into any of these problems.
